Salmonellosis, caused by bacteria of the genus Salmonella, was historically entangled with a broad and poorly differentiated category of febrile illnesses that ancient and medieval physicians attributed to corrupted air, bad water, and humoral imbalance. The disease only acquired its modern identity in the late nineteenth century when bacteriology provided the tools to distinguish its causative agent from those of other enteric fevers. Its naming honored the American veterinary scientist Daniel Elmer Salmon, in whose laboratory the bacterium was first isolated.

Historical Narrative

For most of recorded history, the gastrointestinal and febrile illness now recognized as salmonellosis was invisible as a distinct entity, folded into undifferentiated categories of flux, putrid fever, and summer sickness. Ancient Mesopotamian and Egyptian medical texts recorded severe bowel illnesses and prescribed purges, fasting, and ritual cleansing, without any concept of microbial causation. Greek physicians operating under Hippocratic theory attributed such conditions to environmental miasmas, particularly the effluvium of marshes and standing water, and to the consumption of spoiled or unbalanced foods.

The Roman physician Galen elaborated on the humoral understanding of enteric disease in the second century CE, attributing intestinal fevers to an excess of bile and the putrefaction of food within the gut. His framework dominated European medicine for over a millennium. Medieval Islamic physicians including Ibn Sina catalogued intestinal fevers with considerable clinical detail in the eleventh century, distinguishing between varieties of flux and fever by their duration and character, but the conceptual tools to identify a bacterial pathogen remained entirely unavailable.

During the medieval and early modern periods, outbreaks of what was likely salmonellosis occurred in association with contaminated food supplies, particularly meat, eggs, and water sources shared by human and animal populations. Such outbreaks were interpreted through miasmatic theory, attributed to corrupt seasonal airs or divine punishment, and addressed through quarantine, cleansing of public spaces, and prayer rather than any intervention targeting a specific pathogen.

The miasmatic framework began to crack in the nineteenth century as the germ theory of disease gradually gained acceptance. John Snow's epidemiological investigation of cholera in London in the 1850s established the principle that specific diseases could be traced to specific contaminated sources, a methodological innovation that paved the way for later work on enteric diseases. Snow's work did not directly address Salmonella, but it transformed how investigators conceptualized and traced outbreak chains.

The decisive bacteriological breakthrough came in 1885, when Theobald Smith, working in the laboratory of Daniel Elmer Salmon at the United States Bureau of Animal Industry, isolated the bacterium responsible for hog cholera, a disease of swine. Smith later clarified that he had performed the primary isolation work, though the organism was named Salmonella in honor of Salmon. This discovery was part of a broader explosion of bacteriological identification that followed Louis Pasteur's and Robert Koch's foundational work in the 1860s through 1880s.

In 1888, the German physician August Gärtner isolated a related organism, Bacillus enteritidis, from a fatal outbreak of foodborne illness affecting fifty-seven people in Frankenhausen who had consumed infected beef. Gärtner's discovery was a landmark in demonstrating that Salmonella-related bacteria could cause human disease through contaminated food. Subsequent decades saw researchers including Joseph Lignières work to classify the growing family of related organisms, eventually systematized under the genus Salmonella.

By the early twentieth century, epidemiologists and public health officials had accumulated substantial evidence linking Salmonella outbreaks to specific animal reservoirs and food handling practices, and the genus became a central focus of veterinary and public health bacteriology. The development of serotyping methods in the mid-twentieth century, largely through the work of Fritz Kauffmann and Philip Bruce White, allowed the hundreds of Salmonella variants to be distinguished and tracked in outbreak investigations, fundamentally changing how public health authorities understood the epidemiology of the disease.
